The Book of Enoch Explained offers an in-depth analysis of this ancient text and its connections to ancient Mesopotamia. Although evidently widely known during the development of the Hebrew Bible canon, 1 Enoch was excluded from the formal canon of the Tanakh, the canon of the Septuagint and subsequently from the writings known today as the Deuterocanon. Why?
The first part of the Book of Enoch describes the fall of the Watchers, the angels who fathered the angel-human hybrids called Nephilim. The remainder of the book describes Enoch’s revelations and his visits to heaven in the form of travels, visions, and dreams. Most scholars believe that the five sections of Enoch were originally independent works (with different dates of composition), themselves a product of much editorial arrangement, and were only later redacted into what is now called 1 Enoch. However, the narrative is much older than even modern scholars acknowledge.

As a Muslim I know exactly why this book wasn't accepted into the Bible some of those versus are similar to some Quran versus and Hadith
Example Enoch 39.3 is similar to what our prophet said.
ولمسلم أيضا من حديث أبي هريرة رفعه: إن الله يبعث ريحا من اليمن ألين من الحرير فلا تدع أحداً في قلبه مثقال ذرة من إيمان إلا قبضته. وله في آخر حديث النواس بن سمعان الطويل في قصة الدجال وعيسى ويأجوج ومأجوج: إذ بعث الله ريحا طيبة فتقبض روح كل مؤمن ومسلم ويبقى شرار الناس يتهارجون تهارج الحمر فعليهم تقوم الساعة.
They didn't want us to know the truth, this is why they remove those books.
So making and using weapons and holistic healing was NOT intended for the knowledge of humans? We were NOT meant to know about astrology, moon cycles or the way the universe works? Are we to understand that of these things are evil and we’re not meant for us and the practice of such things will condemn our souls? I’m having a hard time with this aspect. Could someone give a little more insight on this??
Nothing in it contradicts Scripture it goes right along with scripture and Jesus himself Quotes from it and multiple scriptures in it talk of different events in Scripture
