  1. Re the bacon debate, yes saturated fat is not bad but the fat of most pork in the US is only 36% saturated. Making it mostly unsaturated fat. Since pigs are monogastric the fats consumed end up in tissues. Therefore the % of PUFA aka seed oils in lard is lower in pork raised without corn or soy (or other high fat seeds) but good luck finding that at your local supermarket.
