You need enough source material to make a convincing fake, that goes for voices as well, so public figures, celebrities etc are the easiest to fake, because there a lot of video and audio publically available.
Joe checks his watch because he’s live running a show and he has a second where he doesn’t have to be talking or paying attention to the guest since the guest is paying attention to Jamie. He has an opportunity to see how far they’ve gotten through this episode and how close they are to the end of the workday. It’s a smart decision and in his position you would too.
