I have a wild theory on dietary conditioning that makes sense — when someone who is conditioned vegan or omnivore, carnivore or etc, tries a significantly different diet, and feels miserable, low energy, etc it's because of their gut biome; the gut biome has evolved to process nutrients and the various structural matrices (e.g. fibrous structures) of the foods it's accustomed to.
This may be why radical diets provide initial results; the gut biome is unable to output the components for energy production efficiently given the existing microbes aren't conducive to processing the compositionally and structurally different fuel, so perhaps fat stores are consumed for energy instead. It stands to reason this may lead to suboptimal physical and cognitive performance because the body is using a less reliable means of energy production, and is either not getting nutrients previously available, or is unable to metabolize them from the new inputs. After some time the biome compensates (to some degree) and energy production switches from fat stores to current food consumption.
I might be talking out of my ass, I will look into it further.
