As an herbalist I know that making tinctures with alcohol are the best way to extract the medicinal properties from the herbs. Maybe they used herbs in their wine and beers not just to flavor it, but to fortify it and benefit from those qualities. Any psychedelic property would probably become more concentrated and effective versus using the plant alone.
