This sure beats the Philippine 'BALUT'. Recommend preparing the MAYA. A very similar bird comes in droves that drives the rice farmer to the poorhouse or the madhouse. Many rice farmers get even. Those pesky birds get plucked, scraped and stuck with a skewer, and barbecued sold at the bus stations as a snack. BALUT was the pre-Viagra fad , still popular boiled duck eggs with growing chick. BON APPETIT.
This is typically French. The napkin serves to bath your face with its smoky aromas and hide you face because of the fat that can drip out. You don't necessarily drown it in anything. The guts are left inside. And if you want to see real cruelty, look at industrial cattle and poultry farms in America.
