The evidence is not great? We have more evidence that Jesus was a historical figure than any other person in antiquity.
I have heard that people in that time and place drank wine instead of water because water left in jars quickly "went bad" when the few microscopic bacteria quickly multiplied in the warm water. Wine was fermented and the fermentation process killed many of the bacteria and kept the rest in check. I have no idea whether that's credible or not.
