  1. This is actually super simple animal based proteins fuck your arteries because of the oil and cholesterol that is inherent in those proteins. Oil in arteries fucks endothelial function. Period. Full stop. That goes for all oils, including olive oil. Now is olive oil the least shitty, yes.

    The statement of animal proteins essentially boils down to another reason to not eat it. Aside from the obvious torture, exploitation, and killing of sentient animals.

Unfortunately, both of these presenters are failing to address the overwhelming amount of research that supports the following concept (entirely independent of what diet compared to what diet and explains all of the findings they each tried to use to prove their respective points): 1). The study of the high fat load of a large amount of full fat cream causing endothelial dysfunction is NOT because of animal proteins, but rather because 50% of animal fat is the fatty acid called palmitate which directly causes both increased oxidative stress and increased inflammation in endothelial cells leading to impaired nitric oxide (NO) production resulting in endothelial dysfunction. 2). High carbohydrate loads do the same thing especially when that carb load includes a high amount of fructose from either sugar or high fructose corn syrup…and you can imagine combing them as in a McDonalds breakfast meal is even worse. 3). Processed meats like lunch meat, bacon, sausage, etc often contain a variety of additives that are not optimal for promoting healthy endothelial function, however, lean cuts of unprocessed meat contain neither harmful additives nor high animal fat loads and amino acids as a general rule are not a significant source of metabolic fuel that impairs endothelial function. 4). The reason vitamin C and Vitamin E help prevent the activating impairments caused by a one time glucose/fructose or fat load on the endothelial cells is because they are both antioxidants which help to reduce excessive oxidative stress (though high doses of either is not good because that will prevent the low level of oxidative signaling needed for healthy cell function. These guys had an opportunity to educate the public on an even more important concept that can help people easily understand the benefits of certain behaviors as they relate to striving for optimal health, but they missed it. Endothelial health is not just an indicator of a risk factor for cardiovascular disease which most associate with heart health, endothelial health is essential to the health of every tissue in your body. In order for blood to go everywhere, the endothelium must go everywhere. It is one of two ways that all the cell type of your body communicate with all other cell types (The other being the central/peripheral and autonomic nervous systems.). Healthy endothelium is inherently anti-inflammatory, antioxidant, anticoagulant, and insulin sensitive. Dysfunctional endothelium is characterized by a pro inflammatory, pro-oxidant, pro-coagulant, and relatively insulin resistant state and it communicates this dysfunction to all the tissues of the body. The immune system becomes chronically activated leading to immune system dysfunction and a chronic low grade level of inflammation. This contributes to inflammation of the fat cells, dysfunctional release of excessive levels of fatty acids which can accumulate especially in skeletal muscle and the liver, further impairing your body’s ability to use blood sugar. This is the root cause of the overwhelming majority of cases of metabolic syndrome and type 2 diabetes, it leads to muscle loss and sarcopenia as people age, accelerating cellular aging leading to premature health and accelerated disease progression, causes neuroinflammation which can impair cognition, contribute to HPA axis dysregulation, mental health disorders, and all aspects of neurodegeneration including Alzheimer’s Disease. It also plays a role in increasing the likelihood of cancer formation. So the take home message is that by learning all the things that are bad for the endothelium, and all the things that promote optimal endothelial health, you can then choose to do all the good things and avoid all the bad things to improve your health, health span, and likely longevity.

  4. "I took a masters-level class in research methodology". So have I. Does that quality a person to evaluate and interpret scientific research? Maybe. But that's a pretty low bar. These are studies dealing with nutrition and physiology. I'm willing to listen to Kresser, but I'd rather hear from an knowledgeable nutritionist or human physiologist. Kresser is an Acupuncturist. They do get a lot of advanced training, it's a doctoral-level program. But not in nutrition.
