Wait sheep fat is more solid than bear and moose fat?
Unsaturated fats (healthy) are liquid at room temperature (think olive oil or avocado oil) and saturated (unhealthy) are solid (red meat butter cheese). Are wild animals healthier than domestic?

The fat thing probably has to do with some kinda bacteria mixed with light decay of the fat cells and the chemical compounds re heating and chilling it effectively drops the bacteria reforms the chemical bounds and possibly burns of the decaying cells all possibly adding to its flavor returning and removing unwanted flavora
