  1. I teach people how to cook, and i get payed way more money than i ever did as a Chef at a Restaurant, or Hotel. I will say this..i will never recommend to my kids, or anyone elses to get into that industry, unless.. they are open minded, have a HUGE passion for food, and can party, and get up with little to no sleep, on almost a daily basis. This is the reality of the industry, and i loved it. So, unless you can survive all those hours, all the late nights.. don't even bother, you WILL fail. Being a Chef, cook, dishwasher pays shit, but you will have the time of your life. If you make it long enough, you may actually make money some day.

  2. Whenever I hear people say things like “yeah back then, a 16 hour day wasn’t even a long day,” I have to roll my eyes. I’ve been a server, barback, bartender – all while going to school, now an engineer. If you worked 16 hour days, great, but don’t fucking pretend it’s not a long day. 16 hours is a long fucking day for anyone. If your job schedules you to sleep, you don’t get much longer than 16 hours straight in any profession. Enough with this romanticizing abusive labor bullshit.

  3. When you hear him and I've heard it before too when people say "you have to love what you do". I didn't understand it until I started working in restaurant kitchens but its because the work is hard. Its so hard that if you don't love it, if you don't love working hard, you will be misrable.
