This is probably an unpopular opinion, but just about every chef I've met is a loser. It seems like they're all former or current drug addicts with severe mental illness from childhood trauma. You can hear it in Daniel's stories. They all act like assholes and think they are god's gift. "Yes chef" like gtfo you make sauces for a living.
The only issue with OJT is your mentor. Good ones and Bad ones. The only way you learn is to push yourself and be your best advocate. If you go to school, pick one that is strong on the business side. This is a white-collar profession, not a shortcut to math life skills.
