I think gased get trapped from the roast process so when it’s ground and you first pour on water it’ll release that gas. That’s a bloom. Then finish with the rest of the water. Pour over is pretty good
In the Dominican Republic 🇩🇴 we use an old artifact to make cofee, it has 3 pieces and basically stacks on top of each other to make the one piece, water in the bottom, beans in the middle and empty on top, once on the fire, you basically steams the water and the steam goes through the grounded beans and then condensate in the upper chamber to be poured in the cup to drink, look up for Dominican Greca, first pick shoes the 3 pieces and the other the whole thing, old school but gives the really good flavor of the coffee ☕️
I've found that some of this over the top coffee that takes 15mins or more of prep, can't beat a cheap diner coffee.
