  1. I will never forget watching Mad Scientist BBQ's review of this guys food. He skewered it. The beef rib was so undercook you literally couldn't even tear it; a great smoked beef rib should fall apart with ease – that was not even remotely close to the case with his. This guy is also just incredibly pretentious. He doesn't like to call it barbecue: he likes to call it "wood fire cooking." Give me a break! Watch him on the episode of "Worth It" where he claims that he puts mustard on his beef ribs to tie in nostalgia and that he sprays the meat with vinegar as its cooking because it creates a tang and a salivation for your mouth, which is a load of crap. You spray it with vinegar, or apple juice, or some other kind of liquid so that it doesn't dry out. That's just BBQ 101. The spray isn't going to leave any flavor, nor is the mustard that he lathers it in prior to cooking.
