Instead of extractors they should use a fume hood when they're mixing the flour. There would be zero leakage of flour into the room. It's an investment, but worth it in a professional restaurant kitchen if it prevents baker's lung if you ask me.
I'm just starting to get into making pizza and it also uses 00 flour, I have to find a solution to that.
I always watch this video while I eat pasta. Anyone else weird like that?
