Ah, we are dealing with models, not with facts. And in fact with models contradicting known fact so much you have to make a just so story up to account for the actual fact occurring after the model.

Not really no. We have no real proof of having seen any single star emerge that way. Astronomers are piecing together informations gleaned from different places, but they are imparting on it a chronological order which we simply do not see in the actual observations. Or very few parts of it in very few of them, if Sirius changed colour.
